Potato Salad
Ingredients:
- 6 medium potatoes, cubed
- 2 tbsp honey
- 2 tsp dry mustard
- 1 tsp onion powder
- ½ tsp black pepper
- ½ cup low-sodium mayonnaise
- 1/4 cup green bell pepper, chopped
- 1/4 cup celery, sliced
- ¼ cup sour cream
Directions:
- Boil potatoes until done but not soft. Rinse in cold water before allowing to cool.
- Mix sour cream, mayonnaise and seasonings.
- Pour the mixture over potatoes and coat them with it.
- Fold in chopped vegetables.
Yield: 6 servings
