Potato Salad

Ingredients:

  • 6 medium potatoes, cubed
  • 2 tbsp honey
  • 2 tsp dry mustard
  • 1 tsp onion powder
  • ½ tsp black pepper
  • ½ cup low-sodium mayonnaise
  • 1/4 cup green bell pepper, chopped
  • 1/4 cup celery, sliced
  • ¼ cup sour cream

Directions:

  1. Boil potatoes until done but not soft. Rinse in cold water before allowing to cool.
  2. Mix sour cream, mayonnaise and seasonings.
  3. Pour the mixture over potatoes and coat them with it.
  4. Fold in chopped vegetables.

Yield: 6 servings
